Healthy Panda Express Orange Chicken

Ahhh so excited for today's blog post! I had several requests to share healthy recipes, so I finally rounded up my brother (aka best chef ever) and said let's DO THIS! My little brother may be 5 years younger, but DAMN he has like 100+ years on me when it comes to anything cooking related. Let's just say Albert did not marry me for my skills in the kitchen... ha!Today, I'm sharing our Whole 30, keto-friendly, Panda Express orange chicken. Seriously, it's AMAZING and super easy. So let's get into it...

Ingredients:

2 lbs of boneless skinless chicken thighs

2 cups of fresh orange juice, no pulp (I recommend juicing fresh oranges for this)

1 tbsp fresh ginger, chopped

1 tbsp orange zest

3 tbsp honey

2 tbsp sesame oil

1/4 cup coconut aminos

1 tsp pepper1 tsp garlic powderCrushed red pepper (optional)

Instructions:

  1. For best results, juice a few oranges with a juicer to make 2 cups of fresh juice. If you do not have a juicer, no problem! Make sure to purchase orange juice with no pulp.

  2. Clean + cut chicken into 1 inch cubes.

  3. Heat large frying pan and add sesame oil. Add chicken into pan and cook until edges are brown (approximately 6-8 minutes).

  4. As the chicken is cooking, stir together the sauce mix in a separate bowl. Add the garlic powder, fresh ginger, orange zest, honey, pepper, coconut aminos, and orange juice and mix together.

  5. Once the chicken is done cooking, remove from the pan and set aside. Pour the sauce mixture into the same pan. Bring to a boil for 15-20 minutes, stirring every minute until sauce starts to thicken.

  6. Once the sauce has thickened, add the chicken back into the pan and stir together.

  7. If you prefer a little spice, season with crushed red pepper.

  8. Serve over steamed broccoli or rice/quinoa.
